We are getting used to the rain, hard wind and gray weather again. We love making homemade soups during this time of the year, it’s the perfect medicine to warm you up. We always recommend to make a bit extra so you can use it as lunch the next day. If you would like to make it a bit healthier use a bit of creme fraiche instead of herb cheese.
Ingredients for 4 portions
♥ 2 Courgettes
♥1 Red onion
♥ 2 Garlic cloves
♥ 100 Gram herb cheese
♥ 1 Liter vegetable stock
♥ 200 Gram salmon flakes (optional)
♥ Pepper & salt
- Chop the garlic and red onion into small pieces, preheat a large pan and fry the onion and garlic for 1/2 minutes.
- Chop the courgettes into small pieces as well and add them with the garlic and red onion, fry it all together for another 5 minutes.
- Add 1 liter vegetable stock into the pan and let it simmer for 10 minutes.
- We are almost done…. Blend the soup with a manual blender or normal blender, add the herb cheese or creme fraiche you can blend it again or just be patient and let it melt into the soup so you get a thicker texture.
- If you choose for the salmon flakes (highly recommended) add them on top with a bit of pepper and salt. We sadly forgot the salmon flakes and we definitely missed them in our soup.
Your soup is ready to be eaten now, enjoy!
