Guilt-free chocolate muffins

This is heaven! No reasons to feel guilty after having those healthy chocolate muffins. The hours spend in the kitchen are well rewarded as in our opinion the muffins turned out perfect. We experimented with different ingredients, oven temperatures etc but this came out as the one!  

 

Ingredients:

100 ML Almond milk

180 Gram Almond meal 

50 Gram Cacau powder

50 Gram Dates 

50 Gram Walnuts 

20 Gram coconut flakes 

16 Gram Baking powder

2 TSP Chia seeds 

3 Ripe bananas 

2 Eggs 

2 TSP Honey

1 TSP Vanilla (optional)

    • Add 10 ML water to the chia seeds, stir it well and let it set in the fridge for 30 min
    • Preheat your oven to 175 degrees
    • Mix the chia seeds, walnuts, dates, coconut flakes, banana’s, honey, almond milk and vanilla in a blender
    • Get it out of the blender and put it into a big bowl
    • Add the eggs, almond meal, cacao powder, baking powder and mix it all very well
    • If you are using a muffin tray add some coconut oil or baking spray onto the tray, it is not necessary to use that if you are using paper muffin cups
    • Separate the mixture into the muffin tray/cups. Make sure they all contain a similar amount 
    • Place into the oven for 20/25 min

     

    Once the 20/25 min are over you can get the muffins out of oven. Leave them for about 5 min so they can cool down, as we don’t want them to break when we are taking them out of the tray/cups. Now you are ready to enjoy them (hopefully) as much as we did. 

     

    Small secret: use them as a dessert with some ice cream on the side, yummmm delicious!
